When Keisha left Jamaica to study nursing, she thought she had her life mapped out. But the longer she lived abroad, the more she realized the thing she missed most wasn’t weather or beaches… It was flavor. It was culture. It was the food that tasted like family, Sundays, laughter, and love.

Meanwhile, Duhane the pioneer, who was working as a IT specialist had a passion and a gift, he could cook anything with instinct. No measuring, just vibes and skill passed down through generations. Together, over six patient years, they perfected a Jamaican patty dough so flaky and tender they knew this was what was missing.

What started as late-night experiments turned into a recipe that changed everything.

In 2023, they took a chance on a small farmers market stall. No fancy setup. No big equipment. Just handcrafted patties, real Jamaican spices, and the courage to show Alberta what authentic Caribbean flavor really tastes like. They sold out. Then they sold out again.

Word spread fast: “The patty people are here!”

Soon the tent became a food truck.

The food truck became a movement. Families, students, and elders, lined up for beef, jerk chicken, curry chicken and oxtail, flavors that told stories with every bite.

Island Crust & Spice grew because the community felt the passion baked into every flaky layer. No shortcuts. No mass-production. Just real ingredients, slow methods, bold seasoning, and the kind of care you can’t fake.

Today, Island Crust and Spice is more than a patty business, it’s a celebration of Caribbean culture, handmade craft, and the beauty of starting from scratch and building something real. It’s a reminder that even far from home, you can create a taste of belonging.
